  • 2 lbs. carrots, peeled and sliced into 1/4” sticks
  • 1 tbsp. Vegetable oil
  • Salt and pepper to taste
  • 1/2 cup parmesan cheese, grated

  1. Preheat oven to 425 °F Gently toss the carrot fries in the vegetable oil.
  2. Mix salt, pepper, and cheese to coat before spreading carrot fries in a single layer on a silicon mat or parchment paper lined baking sheet.
  3. Roast in oven until tender and lightly charred, about 16-20 minutes, being sure to rotate halfway through.
